something for the veggies out there....

for those of you who saw "lemony snickets, a series of unfortunate events" youll remember this recipe...

makes about 6 servings with a serving size of 1 cup and about 1/2 cup vegetables and sauce-recipe may be doubled for more guests of course...

2 tsp olive oil
1 medium onion-chopped
4 garlic cloves-minced
2 carrots-peeled and diced
1 28 oz can plum tomatoes-coarsely chopped and undrained. (usually i just open the can and run a knife through the tomatoes when it asks for this preparation)
2 tbsp white wine
2 tbsp minced basil
2 tbsp chopped black olives
2 tsp capers
6 cups cooked fusilli (corkscrew)pasta

2 tbsp minced parsley
2 tbsp grated parmesan cheese

In a heavy skillet over medium heat heat the oil. saute the onion and the garlic for 5 minutes. Add the carrots and continue to saute for 5 more minutes. add the tomatoes and white wine and bring to a boil. Lower the heat and simmer for 15 minutes. add the basil, olives, and capers and simmer for 5 more minutes. Toss the cooked fusilli with the sauce. garnish with parsley and grated parmesan cheese as desired.
